A few precautions before cooking eggs...

Before you rush headlong into rolling the eggs onto the grill, make sure they're at the right temperature. An egg just out of the fridge and placed over the coals in less than two minutes is likely to crack immediately. The same applies to very fresh eggs, which will be more fragile when cooked. Wait a few days after laying before barbecuing.

How to cook eggs on the barbecue

As with boiled eggs, you can cook them in a variety of ways on the barbecue. However, to prevent them from breaking once placed on the grill, make sure you have few embers so that the fire is really gentle. You can also move the embers to one side of the barbecue and place the eggs on the other side of the grill for indirect cooking.

To obtain soft-boiled eggs, allow 6 minutes for cooking, between 8 and 10 minutes if you want them soft-boiled, depending on whether you like the yolk more or less runny, and finally, leave them to brown for 12 minutes if you want them hard-boiled. The eggs should be laid whole, with their shells, and the lid of the Kokko should be kept closed throughout cooking. If you want to enhance their grilled flavour, after cooking them to your liking and removing the shells, you can place them back on the barbecue for a quick back-and-forth on each side. Use tongs to cook your eggs without burning yourself: catching an egg rolling off the grill with your bare hands can be very dangerous! Before you get started, remember to check all the essential safety standards for a successful barbecue.

Here's a tip: to stop the eggs cooking and make peeling them easier, immerse them in cold water as soon as they come off the barbecue.

How about smoking eggs on the BBQ?
