
Preparation time: 10 minutes - Cooking time: 40 minutes - Serves 6
Ingredients:
18 scallops
12 Gambas
400 g black rice
Salt, Pepper
Optional: 1 orange
Preparation:
1. Cook the black rice with 60 g salt for 35 minutes.
2. 15 minutes after the start of cooking, work on the second part of the dish, seasoning the scallops with 6 g (2 pinches) of salt.
3. Lightly oil the Gambas.
4. Place the Gambas in your Kokko, for smoked cooking, for 10 minutes.
5. Then, after 5 minutes, place the scallops in the Kokko for a further 5 minutes.
6. Remove the rice and place in a pan.
7. Add the scallops and prawns and season with salt and pepper.
8. Your dish is now ready to serve!
Optional: you can squeeze an orange and add its juice to the pan for a light, aromatic taste.
