Ingredients
18 large prawns
1 red onion
2 garlic cloves
1 piece ginger 1cm
1/2 bunch coriander
3 limes
2 tablespoons nuoc-mam
2 tablespoons olive oil
1 pinch chilli
Pepper
Preparation:
1. Remove the heads from the prawns. Thread onto skewers.
2. Prepare a marinade: mix finely chopped onion, crushed garlic, grated ginger, chopped coriander, zest and juice of one of the limes, oil, nuoc-mam, chilli and pepper. Pour the marinade over the shrimps and chill for 2 hours. Cut the remaining limes into quarters.
3. Grill the shrimps and limes for ten minutes on a hot kokko. Drizzle the shrimp with the juice from the grilled limes.
Tip: Serve with a dry, fruity white wine.
