1 live lobster
For the mayonnaise:
1 egg yolk
1 tbsp. mustard
7 tbsp. oil
1 lemon Preparation:
1. Prepare your lobster and cut it in half.
2. Heat your plancha for 5 minutes, then arrange the lobster on the shell side. The colour the lobster and its meat will change. 3 minutes before the end of cooking, cut the lobster's pasta.
3. Prepare your mayonnaise. Whisk the egg yolk with the mustard and salt. Gradually add the oil while continuing to whisk. Your mayonnaise will gradually rise and become firm.
4. Remove the lobster from the Kokko and enjoy!
