Ingredients
4 chicken thighs
1 tablespoon chili sauce
1 tablespoon ketchup
1 teaspoon allspice
1/2 teaspoon cinnamon
1 clove crushed garlic
2 tablespoons brown sugar
1 tablespoon olive oil
1 tablespoon rum
Salt and pepper
For the mango salsa:
1 mango, peeled and cubed
1 red onion, chopped
1/2 red bell pepper, cubed
2 spring onions, chopped
1 teaspoon fresh thyme
1 tablespoon olive oil
Preparation:
For the chicken: place all the marinade ingredients in a shallow dish and stir. Brush half the marinade over the chicken thighs and chill for at least an hour.
Light your Kokko and cook both sides of the chicken, then reduce the heat to finish cooking (about 30 minutes). Baste the chicken regularly with the remaining half of the marinade.
For the mango salsa, combine all the ingredients in a dish. Chill for one hour. Arrange on plates with lime wedges and mango salsa. Enjoy!
