You recently became the proud owner of a Kokko, so why did you opt for a Kamado?
I bought my Kokko last spring. I had been looking for a multifunction barbecue for some time. I came across the kamados and a little later the Kokko brand... After a few months of use, what stands out and what I like most about a kamado is that you can cook a variety of complete meals on the same appliance.
What's your signature dish?
I don't necessarily have one... If I had to choose a quick and efficient dish that I like to make: onglet de boeuf avec sa croûte au poivre. To take advantage of the embers and prepare a little side dish, cook an unpeeled sweet potato and eggplant pierced directly on the grill before the piece of meat. A little fresh tzatziki-style sauce and you're done. SIMPLE, VERY FAST, EFFECTIVE.
Any tips or tricks to share with Kokko Lovers?
Always fill your Kamado in the same way, whether it's for long, low-temperature cooking or for grilling. By doing so, you'll get to "know" your Kokko, learn how to better manage the rising and how to manage the temperature according to what you want.
How often do you use it?
As soon as possible, alone, with family or friends... I'm looking forward to next autumn/winter for cold smoking (coppa, pancetta, ham and other smoked breasts, fish, ...)
