Pancakes at Kokko

Candlemas, Shrove Tuesday, curfew: all good reasons to make pancakes at home! Easy to prepare and make, they're just as appealing to adults as they are to children. But this year, we're leaving the traditional crêpière behind and cooking our crêpes in the Kokko! Instructions for use.

The classic recipe for pancake batter

The secret to successful pancakes lies in the preparation of the batter. We give you our homemade recipe.

Serves 4 - about 15 to 20 pancakes, depending on thickness:

  • 250 g fluid flour
  • 4 eggs
  • 1/2 liter milk
  • 1 sachet vanilla sugar * 50g melted butter
  • 1 pinch salt
  • According to taste: a tablespoon of rum or orange blossom

 

Preparation for lump-free pancakes :

  • Before you start, melt the butter and warm the milk until slightly lukewarm.
  • Put the flour, salt and vanilla sugar in a bowl.
  • Mix gently. When the mixture is smooth, add the melted butter while continuing to stir.
  • Then gradually add the milk without stopping to stir, followed by the rum and/or orange blossom.
  • Before cooking the crêpes, let the batter rest for at least 30 minutes at room temperature.

The right equipment for barbecuing crêpes

At first glance, cooking pancakes on the barbecue may seem perplexing. But with the right accessories, nothing is impossible. To cook crepes on the Kokko, all you need is the right equipment anda cast-iron skillet. With its ability to concentrate and distribute heat evenly, your crepes will cook quickly. And thanks to its removable handle, you'll be able to practice stir-frying them! In addition to crepes, the cast-iron skillet can be used for gentle cooking and sauces, for soft, juicy foods.

Cooking pancakes at Kokko

While your Kokko is heating up, melt approx. 20g of butter and lightly grease the pan between each pancake to prevent them from sticking. To avoid burning yourself, Kokko has a trick. Cut a small potato in half, prick it with a special barbecue fork - with a long handle! - then dip the cut side in butter to safely brush the pan. And don't forget to wear gloves, as you'll be handling the pan handle several times, so you can't touch it with your bare hands.

To cook, place your griddle high up on the griddle and heat the pan on top. Once hot, grease the pan, then pour in a ladleful of pancake batter. Leave to cook for a maximum of 1 to 2 minutes, depending on thickness, before turning it over using the handle or a spatula - which is safer - and leaving it to brown for a further 1 to 2 minutes before removing it from the heat.
