Ingredients:
3 balls mozzarella di buffala
100 g shelled pistachios
1 rusk
olive oil
1 tsp pepper
1 tsp dried thyme
2 eggs
Fleur de sel
Preparation:
1. Mix pistachios with rusk, pepper and thyme. Remove the mozzarella balls from their packaging and place in the freezer for 15 minutes.
2. Whisk the eggs into an omelette
3. Dip the mozzarellas in the eggs, then roll them in the pistachio breadcrumbs. Place in the freezer for a further 5 mins.
4. Cook the mozzarellas a la plancha for 3 to 4 minutes, then turn them over for a further 3 to 4 minutes.
5. Place in a dish, drizzle with olive oil and season with fleur de sel.
