Ingredients
6 potatoes
7 eggs
3 slices of white ham
1 onion
Salt, pepper
Olive oil
Parsley, chives
Butter
Optional: paprika or nutmeg
Preparation:
1. Peel and wash the potatoes. Grate them with a coarse-hole grater.
2. Peel and slice the onion, chop the parsley. Mix the potatoes with the onion, parsley and 1 egg. Season with salt and pepper (and spices if desired).
3. Light your Kokko. Oil it and add a knob of butter. Make 6 small heaps with the mixture and flatten like a patty. Cook over a high heat for 3 minutes, then leave to brown over a medium heat for 8 minutes on each side.
4. Meanwhile, cook 6 fried eggs and cut 6 circles out of the white ham.
5. Arrange the mats on a plate, then the circles of white ham and finally the fried eggs on top. Garnish with chives.
Tip: Serve with a green salad garnished with tomatoes.
