1 free-range chicken 1.4 kg
1 sprig rosemary

20 cl beer
1.5 kg small potatoes
1 red onion
100g butter

Preparation:
1. Turn on your Kokko and reach an enclosure temperature of 260°C.
2. Prepare your bird by incising the rump and making an opening large enough to nestle it on the poultry holder, season the inside of the bird with salt and pepper.
3. In the middle of the poultry rack, fill the metal glass 2/3 full with beer, add 2 sprigs of rosemary and a few spices if you like, and then nestle your bird on top, paying attention to the direction, with the fins up and the thighs down.
4. Add the potatoes and quartered onion all around the bird, place the butter cubes on top and place the rack on the Kokko grill.
5. Bake for 45 minutes, brushing with a little butter to prevent the skin from cracking from the heat.
