Recipe ingredients
1.5 kg prepared and washed octopus
4 lemons
2 spring onions, thinly sliced
2 cloves garlic, minced
20 cl wine vinegar
10 cl dry white wine
Olive oil
Oregano
Cayenne pepper
Rosemary
Thyme
Salt, Pepper
Recipe preparation
1. In a large saucepan, cover octopus with olive oil, add white wine, thyme, rosemary and cayenne pepper. Cover with water. Cook over high heat for 2 hours. When the octopus is cooked, you can easily stick a fork into it.
2. Meanwhile, mix the olive oil, white wine, juice of 2 lemons, onions and garlic in a bowl. Season to taste with oregano, salt and pepper. Marinate the octopus in this preparation for at least 1 hour in the refrigerator.
3. Remove the octopus from the marinade and sauté on a hot plancha grill over high heat for 20 minutes.
4. Serve the grilled octopus with a little olive oil and lemon juice.
To preserve your grilled octopus, leave it in olive oil with lemon juice.
