Seasonal produce: what's for dinner in spring?

If you're tired of eating cabbage, find pear compote a bit boring and don't feel like grating Gruyère any more, spring is here and with it a whole host of new products! Find out which ones to put in your shopping cart.

Spring vegetables

We say goodbye to squash and hello to asparagus, carrots, onions, chard, cucumber, artichoke, celery, turnips, broad beans, lettuce, shallots, garlic and morels. Spinach, lamb's lettuce, cauliflower and leeks continue to be eaten until the end of April. From May onwards, arugula, green beans, zucchinis, fennel, peas and pink radishes are also available, and from June onwards, broccoli, eggplants and peppers.

Here are a few recipe ideas to bring out the best in spring vegetables in Kokko:

Soft-boiled celery, crème fraiche and chives

Rainbow of grilled vegetables

Colourful peppers with spices

Fish to enjoy in spring

Even if you can find them all year round, to respect the reproduction periods, you need to know how to choose your fish according to the season. Spring is the ideal time to eat sea bream, sea bass, red mullet, cod, sardines, turbot and monkfish.

Our recipes for grilled fish:

Kokko sea bass with new turnips

Red mullet stuffed with pistou

Cod fillet with kokko

Spring cheeses

In spring, the pastures come back into bloom, bringing pronounced aromas to the milk. Short-ripening cheeses, such as ewe's and goat's cheeses, are therefore to be preferred. Let yourself be tempted by a Crottin, a Selles-sur-Cher or a Rocamadour, for example. We also recommend soft cheeses with bloomy rinds: Saint-Marcellin, Brie, Camembert, Coulommiers, Chaource... And soft cheeses with washed rinds such as Livarot, Maroilles, Pont-L'évêque, Munster, Époisses, etc. And some pressed, uncooked cheeses like Saint-Nectaire and Reblochon.

Spring fruit

Alongside kiwi, mango, pomelo, lemon, orange, avocado and pineapple, April brings blueberries, papaya and passion fruit. May brings strawberries, rhubarb, peaches, plums, nectarines and tomatoes. In June, cherries, apricots, watermelon, melon, figs and redcurrants are also on the menu.
