Ingredients
1 eggplant
2 bunches of cherry tomatoes
Mozzarella balls
Pesto
Balsamic vinegar
Olive oil
Salt, pepper

Preparation:
1. Cut the eggplant into thick strips and season with salt. Leave to drain for 20 minutes.
2. Light your Kokko. Drizzle with olive oil and brown the eggplant slices on both sides. Do the same with the cherry tomatoes.
3. Now it's time for the dressing. Place the eggplant slices on a plate. Then place the mozzarella balls and the cherry tomatoes on top. You can add a few arugula leaves and a little pesto. Drizzle with balsamic vinegar. And it's ready!
