Tournedos with Béarnaise sauce


Cooking time: 10 min - Preparation time: 30 min - Serves: 4

Ingredients

4 beef tournedos
150 g butter
2 egg yolks
2 tbsp. tarragon vinegar
2 tbsp. tablespoons chopped tarragon
Salt and pepper
1 tablespoon 5-berry mix
1 teaspoon cumin seeds
1 teaspoon coriander seeds
1 teaspoon dried oregano
1 tablespoon olive oil


Preparation:

1. Marinate the meat in a cool place: sprinkle the tournedos with olive oil and roll them in the crumbled spices (5-berry mix, cumin, coriander and oregano). Take the meat out a quarter of an hour before cooking.

2. Use your steel Kokko to cook the meat to your liking.

3. Make a Béarnaise sauce by heating the vinegar with the chalotte and tarragon. Add the two egg yolks off the heat. Return to the heat to build up the sauce, then add the cold butter off the heat.

4. Serve and enjoy this delicious dish.
