Wood-fired banana crumble

Ingredients:

4 bananas
2cl dark rum
25g dried Cranberries
25g Goji berries
25g Muesli
5g pumpkin seeds
15g dried bananas





Accessories :

1/2 Ceramic plate

 


Preparation:

 

1. Turn on your Kokko and reach an enclosure temperature of 220°C, place your bananas on the ½ indirect cooking plate and place them in the appliance.

2. Cook the Bananas for 25 minutes until they ooze slightly, remove them at this point and leave them on the plate for a further 10 minutes.

3. Once the bananas are lukewarm, open them in half and scoop out the flesh into a small bowl, mash it with a fork and add the rum.

4. Arrange the banana compote in small ramekins, sprinkle evenly with the Cranberries, Goji berries, muesli, pumpkin seeds and dried banana, then return the ramekins to the grill to cook directly for 8 minutes.

5. Serve with a scoop of vanilla ice cream or caramel if desired.
