Ingredients
1 kg boneless leg of lamb
2 red onions
2 yellow peppers
2 cloves garlic, crushed
4 tbsp olive oil
1 tsp cumin powder
1 tsp ginger powder
1 pinch chilli powder
A few sprigs fresh mint
1 lemon
Salt, pepper
Preparation:
1. Cut the meat into large cubes. Cut peppers into chunks and onions into quarters. Thread alternating pieces of meat, onions and peppers onto skewers.
2. Prepare marinade: mix olive oil, spices, garlic, chopped mint, lemon juice and zest.
3. Pour over skewers and marinate for at least 2 hours, turning regularly.
4. Heat the Kokko. Lightly oil the top and cook the skewers for 10 to 15 minutes.
Tip: Serve with Lebanese tabbouleh.
