Limiting waste: How about reusing leftovers?

As you've probably noticed, containment and waste don't mix. It's a fact: the less we throw away, the more we avoid trips to the supermarket. Here are our tips on how to avoid throwing anything away thanks to Kokko.

How to cook BBQ leftovers?

What a pleasure it is to be able to get together as a family around the Kokko. Even if the mood isn't festive, that's no reason to get carried away by the gloom. In fact, for many, this will be the first barbecue of the year, and there may well be plenty of grilled meats left on the grill at the end of the meal. For some, unfortunately, after a few days in the fridge, overcooked merguez and chipos, leftover chicken or over-dried chickpea patties, which even with mayonnaise have become veritable Christian smotherers, will end up in the garbage can. And yet, cleverly reused, they could have added flavor to many recipes. So what to do with leftovers...

... Sausages?

You can add a little softness by mixing them with sauces and, above all, by cutting them into small pieces. Enjoy them as an aperitif with a homemade tartar sauce, add them to pasta carbonara or sprinkle them on a vegetable velouté or gazpacho, pizza or flammekuech instead of grilled bacon.

Our recipe ideas for using up leftover bacon-style sausages :

Raclette and potato pizza

Pizza with bacon, mozzarella and arugula

Flammekuech

...meat?

When not overcooked, it can be reheated and simply eaten. Do you like it cold? It will subtly enhance the smoky, grilled flavour of mixed salads like this duck and grapefruit salad recipe.

Another great gourmet tip is a sandwich, like this recipe for smoked chicken and crudités wrap. If it's a little dry, try this idea for a pulled pork burgerUse whatever meat you've got left and mix it into your sauce after flaking it with a fork to make it moist again.

Finally, you can turn it on its head by incorporating it into breaded croquettes, mixing the cooked meat with herbs, condiments, egg, etc., which will moisten the meat before it goes into the deep fryer.

Our delicious ideas :

Chicken nuggets

Chicken and pistachio meatballs

...Grilled vegetables?

Once passed through the Kokko, their taste is inimitable. Smoked, melting, grilled, they can be turned into homemade purées!

Our vegetable BBQ recipes :

Butternut steak with rosemary

Flame-baked eggplant smoked with pine cones

Baked zucchinis au naturel

If you like them cold, they're also delicious mixed on toast or with fresh cheese, like these eggplant rolls with feta.

...And grilled fish and seafood?

Although they don't stand up well to being reheated, when they're cold, they'll add relief to your bruschettas and summer salads.

Recipe ideas :

Marinated squid with escabeche

Grilled shrimp bruschetta

Vegetable salad with smoked sardines

Smoking food before freezing

While it's perfectly possible to freeze grilled products, you may be disappointed when you come to eat them, as the multiple operations: grilling - freezing - thawing, will surely have made your product tough and rather dry. On the other hand, you can add flavor to your products before freezing them, so that you can eat them later. To find out how, read our instructions for smoking with Kokko. It's an excellent way of avoiding waste and saving food that's already spoiling.

Our flagship smoked recipes include :

Smoked pork belly

Smoked ham with pineapple and honey

Smoked bacon

Applewood-smoked drunken trout

Remember: never refreeze a product that has already been frozen, even if you've cooked or smoked it.
